چکیده :
The Effect of Aloe Vera Gel on the Antioxidant Capacity of Cornelian Cherry Fruit During Cold Storage Saeedeh Khaleghi 1,*, Vali Rabiei 1, Farhang Razavi 1 1Department of Horticulture, Faculty of Agriculture, University of Zanjan, Zanjan, Iran E-mail: Khaleghi_sa@yahoo.com Cornelian cherry (Cornus mas L.) belongs cornaceae family, which are distributed mainly in temperate areas of the northern hemisphere, and the quantity of phenolic and antioxidant substances depends on the storage conditions. The present study was conducted to investigate the effects of Aloe vera gel coating on the antioxidant capacity of cornelian cherry fruit during cold storage. A factorial experiment in a completely randomized design with three replications was performed. Experimental treatments were Aloe vera gel at three levels 25%, 50% and 75% and control (distilled water). TSS, TA, vitamin C, anthocyanins, total phenol, flavonoids and antioxidant activity were measured and evaluated during the time of storage. The results showed that at the end of storage the antioxidant indices such as anthocyanin, total phenol, flavonoid, and total antioxidant activity of fruit decreased gradually, in addition, TSS increased during the storage period, this was while with increasing the amount of TSS, the amount of TA had a decreasing trend. Among the treatments, 50% and 75% concentrations of Aloe vera gel were more effective in fruit quality improvement. In conclusion Aloe vera gel coatings could act as promising and safe method for preserving nutritional quality of cornelian cherry fruit during cold storage.
